Adjust oven rack to top position and preheat oven to 450 degrees. Wash and dry all produce. Slice @potatoes{2%medium} into ¼-inch-thick rounds. Toss on a #baking sheet{} with @cooking oil{1%tbsp}, @fry seasoning{1%tsp}, @salt{1%tsp}, and @black pepper{1%tsp}. Roast on top rack until lightly browned and tender ~{18%minutes}.

While potatoes roast, halve, peel, and dice @onion{½%medium}. Halve @ciabatta{1%loaf}. In a #small bowl{}, combine @bbq sauce{½%cup}, @ketchup{1%tbsp}, @ancho chili powder{½%tsp}, @beef stock concentrate{1%tbsp}, @cornstarch{1%tsp}, and @water{1%tbsp}.

Heat @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Add onion; cook, stirring, until softened ~{4%minutes}. Add @ground pork{½%lb}; season with salt and pepper. Cook, breaking up meat into pieces, until browned ~{3%minutes}.

Stir bbq sauce mixture into pan with pork. Cook, stirring, until sauce has thickened and pork is cooked through ~{2%minutes}. Taste and season with salt and pepper. Turn off heat.

While filling cooks, toast ciabatta until golden brown ~{1%minutes}.

Fill ciabattas with as much pork filling and @sliced dill pickle{1%cup} as you like. Divide sandwiches between plates. Serve with potato rounds and any remaining pickle on the side.
